Experiments and Inventions from my kitchen- II

Potato big size- 2
Onion - 1
Carrot - 4 big size
French Beans - 150 gm
Extra ripe Tomato - 3
Ginger paste - 1 tsp
Fresh Cream - 2 Tbsp
Coriander powder - 1tsp
Kashmiri chilli powder - 1 tsp
Green chilli - 2
Oil - 2 tsp
Salt - 1tsp
Curry leaves - 4 strands
Cumin seeds - 1/2 tsp
Oregano seeds - 1/2 tsp
Mustard - 1/2 tsp
Asafoetida - 1 pinch

1.Peel and pressure cook Potatoes and mash them to a smooth paste
2.Slice and saute Onion with Ginger paste
3.Slice Tomatoes into huge chunks
4.Grind Tomatoes with  corriander powder,chilli powder, green chilli, sauted onion-ginger into a very thick smooth paste (dont add water while grinding, the juice from tomato would be sufficient for getting the mix grind to smooth paste)
5.Add the tomato-onion paste to potato and mix thouroughlly.
6. add approx 100 ml (1/2cup) water and cook till all three vegetables form into to one mass
7.Scrap carrot to small shavings (approx 2 soup bowl full of carrot shavings)
8.Chop beans to tiny pieces (approx 1/2 cm pieces) - You should have 1.5 soup bowl full of bean pieces
9.Splutter Mustard, Oregano, Cumin, Curry leaves and Asafoetida in oil
10.Add carrot and beans thouroughlly to the spices mix and cook with salt
11.Once the mix is cooked, turn off flame add cream and add it to the tomato-onion-potato paste and mix well.

DO NOT cook the final mixture.

Optional - Add grated Tofu / Cheese / Paneer.
Serve with Roti/Dal-Rice
